Cream of Tomato Soup (Copycat Campbell's)

You get the comfort food vibe of childhood memories, with the homemade taste and texture, It’s thick and rich with a tinge of sweetness. Comfort food at its finest! And I was able to make this with ingredients already in my pantry. What goes better with creamy tomato soup… grilled cheese (I didn’t include a recipe for that… just buttered bread & American cheese… delicious

INGREDIENTS

  • 1/2 tablespoon olive oil

  • 1/2 cup chopped onion

  • 1 garlic cloves, chopped

  • 1/2 tablespoon sugar

  • 3/4 teaspoon salt

  • 1/8 teaspoon ground black pepper

  • 1/4 teaspoon dried oregano

  • 1/2 (6 oz.) can tomato paste

  • 1/2 28 oz. can tomato puree

  • 1/2 28 oz. can tomato sauce

  • 1/2 cup chicken broth

  • 1 cup whole milk

DIRECTIONS

  1. Heat a large pot over medium heat with the olive oil.

  2. Add the chopped onion and cook for 5 minutes until softened, stirring.

  3. Next add in the garlic and stir, cooking for a minute more, then add in the salt, pepper, oregano and sugar. Stir and cook for another minute, then stir in the can of tomato paste.

  4. Carefully pour in the tomato puree, sauce and chicken broth.

  5. Stir together and cook for 15 minutes covered partially with a lid.

  6. After the soup has cooked, pour in the milk and blend with an immersion blender until smooth.

  7. Taste for seasonings and serve.
